Mango Lassi Overnight Oats

Would you believe me if I said I discovered Mango Lassi only when I moved to the US? It’s true! Growing up, our favorite way to enjoy mangoes back home was as is or as Aam Ras (sweetened mango purée) or as a chilled and creamy Mango milkshake. Honestly though, mango lassi has been an amazing discovery – I love the texture and flavor of it and the fact that you find it at literally every Indian restaurant out here.

That being said, I do believe that fresh mango lassi is just a whole other world and so, when I set out to create these overnight oats – I just knew I’d do it in the summer and use fresh mangoes. I’m using Ataulfo (champagne) mangoes because those are the ones I could find, you can also use store bought mango purée if that is more readily available. These overnight oats are creamy, tangy and have this wonderful sweetness from the mango, crunch from the pistachio and I’m even adding in some saffron for an absolute dessert feel! These are hard to place as breakfast because they are so flavorful, they’d easily pass for dessert. 🙂

The texture of the overnight oats soaked in milk almost resembles the Indian dessert ‘kheer’ by morning and so, it just makes all the flavors come together really well. Mango Lassi Overnight Oats

Begin your summer mornings with the perfect treat - combining the beloved mango lassi with the easiest breakfast, overnight oats for a flavorful explosion! Fresh mango, the tang from the yogurt, fragrant saffron notes, crunch from the nuts and creamy oats - is it dessert, is it breakfast? YOU decide.

Ingredients

  • 0.75 cup freshly puréed mango
  • 0.5 cup Greek yogurt
  • 2-3 Saffron strands
  • Nuts per choice (pistachio, almonds, cashews)
  • 1 cup Oats
  • 0.5 cup regular/plant-based milk
  • Sweetener of choice (honey/maple syrup/other)

Instructions

    1. Combine all the ingredients and mix well. If required, add sweetener of choice to taste.
    2. Chill in a lidded container for 6-7 hours in the fridge.
    3. If you want layers (like the picture): prepare the mango lassi separately: whisk greek yogurt in a bowl and add the mango purée, adjust sweetness to taste. In a separete container, combine the milk, oats and add in the nuts and sweetener to taste.
    4. The next morning: layer the oats and mango lassi.
    5. Garnish with additional mango pieces, nuts, saffron etc and enjoy it as breakfast or dessert! SO good!
