Peach Rosemary Lassi

It has definitely been a while since I had peaches, but they were definitely one of my favorite fruits growing up. Ever since I came here to the US, the Indian drink I’ve seen trending everywhere is Mango lassi. To be honest, I believe it is more popular in the US than back home in India! For the uninitiated, lassi is a creamy, yogurt-based drink that is an Indian summer staple. I’ve been trying to eat more seasonally this year and that has led me to really enjoy summer fruits. With all the fruity drinks I’ve shared so far, I’m sharing the joy with you!

Incredibly delightful with the flavor of fresh, juicy peaches, a yummy tartness from the greek yogurt and some amazing flavor notes from the rosemary, cardamom and saffron, this will definitely be your new go-to lassi recipe. Best enjoyed on a hot summer afternoon – so refreshing!

Peach Rosemary Lassi

Lassi is a creamy yogurt-based drink that is an Indian summer staple. With a delicate sweetness from fresh, juicy peaches, tartness from the Greek yogurt and aromatic notes from the rosemary and cardamom - this Peach Rosemary Lassi packs in incredible flavor while being super refreshing!

Ingredients

  • 2 peaches, peeled and halved
  • 1.75 cups Greek yogurt
  • 1-2 sprigs Rosemary
  • A pinch of salt
  • 1-2 tsp Cardamom Powder
  • 3-4 Saffron strands
  • 1 tbsp chopped Pistachios
  • 1-2 tbsp sweetener of choice (honey/maple syrup recommended)

Instructions

    1. Purée the peaches in a food processor until smooth.
    2. Whisk the yogurt in a large bowl until smooth. Add water as needed to adjust consistency - it should be creamy but not too thick.
    3. To the yogurt, add the rosemary, cardamom and a pinch of salt. Fold in the peach purée until well combined.
    4. Taste and add the sweetener as needed. Mix well to incorporate. You can add some ice cubes at this stage to thin out the lassi or make it even cooler.
    5. Pour into serving glasses. Garnish with pistachios, saffron, peach slices and rosemary and enjoy chilled.

Notes

  • For the creamiest and smoothest lassi, do not make this in the blender. That may result in the lassi having a grainy texture.
  • You can also use traditional whole milk yogurt ('dahi') in here. This is how lassi is traditionally made.
  • If you're not fond of rosemary, you can add mint instead for a super bright and refreshing flavor.
