Loaded Avocado & Chutney Toast

Happy New Year, y’all! It’s 2022 and officially time to level up. I think we can all agree that the last two years have been no cakewalk and we’ve had to adapt, shift gears, scale up and back quite rapidly but the one thing that has only grown is our appetite, isn’t it? This recipe is my attempt at creating a restaurant style brunch toast and honestly, it really hits the spot. Having made this quite a few times, I think its safe to say I won’t be ordering another avocado toast at a restaurant for a while and I hope you feel the same way once you try it! 😀

Loaded Avocado & Chutney Toast

Your favorite avocado toast made extra delicious: bursting with flavor, texture and freshness - you won't order Avocado Toast at a restaurant again! Don't skip the cilantro chutney and tahini, and enjoy for brunch/breakfast or as a snack.

Ingredients

  • 2 slices Sourdough/Multi-grain bread
  • 1 tbsp Tahini
  • 1 tbsp Cilantro Chutney
  • 1 tsp Red pepper flakes
  • Extra-virgin olive oil for drizzling
  • 6-8 cherry tomatoes, halved
  • Feta cheese crumbles, to taste
  • Micro-greens/fresh herbs, to garnish

Avocado Mix

  • 1 ripe avocado, halved and pitted
  • 1 tbsp lemon juice, freshly squeezed
  • 1 tbsp lime juice, freshly squeezed
  • 1 tsp of sea salt, more to taste
  • Fresh ground black pepper, to taste

Instructions

  1. Gather your ingredients, cut up the tomatoes and and prep the avocado mix. In a flat bowl, add the avocado, lemon juice, lime juice, salt and pepper and mash to combine. You can also add additional seasonings, herbs or jalapenos in here for spice.
  2. Toast the bread - I recommend using fresh sourdough and adding just a little olive oil while toasting.
  3. Assemble the toast: On each slice, slather on the tahini, cilantro chutney and top with the avocado mix. Top with cherry tomatoes, red pepper flakes, drizzle on some EVOO and finish with feta and micro greens/herbs of choice.
  4. Season with salt, pepper and everything but the bagel seasoning or other seasonings per taste.
  5. Top with a little hot sauce and enjoy!

Notes

    • For maximum flavor, do not skip the tahini and cilantro chutney. The tahini adds a creamy nuttiness and the chutney adds a burst of freshness.
    • For easy prep, all ingredients except the toast and avocado mix can be gathered ahead of time. Make the avocado mix while the bread is toasting, assemble and enjoy!
    • For extra protein, top with a fried/poached egg.
